Stove Top Meatloaf

Meatloaf was always one of my least favorite dishes as a child. In fact, I know very few kids who love meatloaf, so I suppose I’m in good company. As I have gotten older, I have learned to enjoy meatloaf, but I probably wouldn’t order typical meatloaf at a restaurant or anything. However, as a child, one thing I did love was the stuffing at Thanksgiving (and I still do!!). I think I would eat more of that than most anything else. So, when I found this recipe a while back, I just had to try

1 lb. ground turkey or beef
1 box Stove Top Stuffing
1 egg
1 cup water (can use less/no water if you like a more firm/crusty meatloaf)

1. Mix all ingredients together (do not prepare the stuffing mix – stir it in the meat mixture dry).
2. Press into a greased loaf pan (or I like to use an 8-in round casserole dish).
