You have to try Stuffed Acorn Squash! It’s a little taste of fall in each bite, gluten free, healthy, and simply delicious.

2.5 cups cooked quinoa
1 onion, finely chopped
3 celery stalks, finely chopped
¾ lb ground pork sausage with sage
1 tsp dried sage
1 tsp thyme
2 tbsp freshly chopped parsley
½-3/4 cup Organic Dried Cranberries
¼- 3/4 cup chicken stock
1 garlic clove, minced
1 large acorn squash
Avocado oil
