Surprise Pumpkin Cookies!

I love pumpkin cookies with chocolate chips AND raisins. So I thought, why not try using Chocolate Covered Raisins instead. When it comes to cooking and baking, I’m one of those people who figures I might as well try my crazy new ideas. What’s the worst thing that could happen? So I tried it! The results are amazing! The chocolate coating melts and the raisin stays plump and chewy! Score that a win!

½ c. shortening
1 c. sugar
1 egg
1 c. canned pumpkin
1 T. grated orange peel
2 c. flour
1 t. baking powder
1 t. soda
1/4 t. salt
1 t. cinnamon
1/2 t. vanilla
1 1/2 c. Chocolate Covered Raisins
1/2 c. nuts (optional)
1 c. sugar
1 egg
1 c. canned pumpkin
1 T. grated orange peel
2 c. flour
1 t. baking powder
1 t. soda
1/4 t. salt
1 t. cinnamon
1/2 t. vanilla
1 1/2 c. Chocolate Covered Raisins
1/2 c. nuts (optional)
Cream shortening and sugar. Add egg, pumpkin, orange peel and vanilla. Sift dry ingredients together and mix into pumpkin mixture. Be careful not to over mix!
