Sweet and Sour Meatballs (quick and easy)

This easy and delicious recipe for sweet and sour meatballs calls for frozen/pre-made meatballs, reducing prep time. Don't worry about leftovers, it tastes great the next day too.

35 [small-medium] frozen meatballs
1 [20 ounce] can pineapple chunks
1/3 cup water
1/2 cup brown sugar
2-2/12 tbsp white vinegar
1 tbsp soy sauce
3 tbsp corn starch
1/2-1 tsp ground ginger
pinch of salt
1/2 red pepper (approx. 1/2 inch pieces)
1 green pepper (approx. 1/2 inch pieces)
1 carrot (diced)
1 [20 ounce] can pineapple chunks
1/3 cup water
1/2 cup brown sugar
2-2/12 tbsp white vinegar
1 tbsp soy sauce
3 tbsp corn starch
1/2-1 tsp ground ginger
pinch of salt
1/2 red pepper (approx. 1/2 inch pieces)
1 green pepper (approx. 1/2 inch pieces)
1 carrot (diced)
Step 1: Prepare meatballs following the cooking instructions on the package.
Step 2: Drain pineapple chunks and reserve juice.
Step 3: Add water to the reserved pineapple juice to make 1 cup of liquid. Pour the pineapple juice-water mixture into a medium-large sauce pan over medium-high heat.
Step 4: Immediately add 1 tbsp soy sauce, 1/3 cup water, 2-2 1/2 tbsp white vinegar and 1/2 cup brown sugar to the sauce pan and stir well to combine.
Step 5: Stir in 1/2-1 tsp ground ginger, a pinch of sea salt and 3 tbsp corn starch.
Step 6: Add pineapple chunks, green and red pepper, carrot and meatballs and stir gently to coat in sauce.
Step 7: Once sauce thickens, let simmer (uncovered) for 20 minutes.
Serve alone or over rice.
