Sweet Chili Chicken Quesadilla

Asian flavor meets Latin flavor for this amazing quesadilla. I could eat this every day! This recipe makes one quesadilla, so it's perfect for lunch, or double/triple/quadruple/etc. for dinner.

1 Tbl. but­ter
1/8 tsp. salt
½ tsp. sugar
1 Tbl. Hoi­son sauce
1/2 — 1 small onion, sliced
2 8”-10” inch tor­tilla
1/4 cup Mon­terey jack cheese, shred­ded
1/4 cup ched­dar cheese, shred­ded
1/3 — 1/2 cup warm, cooked, shred­ded chicken
1–2 Tbl. sweet chili sauce
1 tsp. toasted sesame seeds
1 tablespoon cilantro, torn
Place sesame seeds in a dry skil­let over medium-high heat. Keep them mov­ing by shak­ing the pan, toast­ing them as the pan heats and cooks them.
