sweet potato, corn chowder

A healthy, filling comfort soup.

1 large sweet potato,1med baking potato both peeled ,washed and cut into rough cubes,2 celery stalkes ,2tbs olive oil,chopped,1small onion,chopped,1red pepper,again..chopped,1 ,1/2c,frozen corn,1tbs fresh ripped tarragon,1/2 c,light cream,1tbs flour,1 carton of chicken stock,1,1/2tsp ground pepper,1tsp salt.
Garnish
bacon cooked crisp and crumbled,sour cream and sliced green onions.(to your desired amount)
In a large pot on med heat add olive oil potatoes.stir until slightly coloured,add peppers,onions,celery and flour.stir to coat flour on veg.Add cream,stock,corn and seasonings.Simmer for 45 to 60 min on low or until all veg are soft.it will be slightly chunky,If you want it smoother you can mash it down a bit until your desired consistancy. Garnish with toppings
