Sweet Potato Grits with Maple Butter and Bacon

I live by the motto “everything is better with bacon” and these grits are proof that’s true! Now my new motto is “everything is better with maple butter”…this stuff is unbelievably delicious and so addictive. It tastes like buttery maple candy but not too sweet, and it melts on your pancakes, waffles, toast and yes….even grits to make it even more incredible. I have a batch in my refrigerator just waiting to be spread on something and it seems to call out at me every time I open the fridge door

For the grits:
2 large sweet potatoes
1 cup grits (regular or instant)
3 cups chicken stock
1 cup heavy cream
3 strips of bacon, chopped
12 leaves of sage, chopped
sea salt to taste
For the Maple Butter:
1/2 cup maple syrup
1 stick butter
2 large sweet potatoes
1 cup grits (regular or instant)
