Sweet Potato Salad with Red Vegetables and White Sauce

This hearty salad is pleasing to the eyes as well as the body.

1 sweet potato or potato
2 cups chopped lettuce
¼ yellow or red bell pepper
½ tomato, seeds removed.
½ small beet, peeled.
1 small carrot
2 tablespoons raisins
¼ apple
½ tablespoon lemon juice
½ tablespoon Mayonnaise

Prepare a serving plate, put one layer of lettuce or any kind of salad greens at the bottom.
Bake the potato (about 1 hour at 375 degrees Fahrenheit). Let it cool a little then mash and pile up on the lettuce bed.
Cut bell pepper, tomato and beet into thin strips or match sticks; place on top of the potato.
Sprinkle raisins around the potato mash.
Grate the apple, mix with lemon juice and Mayonnaise. Serve as sauce on the side.
