It's apple cider muffin season! Moist, fluffy muffins with apple cider, shredded apple, and your favorite apple pie spices, with a cinnamon streusel on top.
Muffins:
1-1/2 c apple cider
1 large egg
1/2 c granulated sugar
1/2 c brown sugar ( packed )
4 Tbsp unsalted butter ( melted )
1/2 c milk
1 tsp vanilla extract
2 c all-purpose flour
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp allspice
1/8 tsp cardamom
1/2 tsp salt
1 apple ( peeled, cored, and shredded )
Extra melted butter for greasing muffin pan
Cinnamon Sugar Streusel:
1/3 c all-purpose flour
3 Tbsp granulated sugar
1/2 tsp cinnamon
3 Tbsp unsalted butter ( softened )
1/3 c chopped nuts ( optional )

Pork chops with apple is a fall classic. But we can actually make it tastier and simpler. And yes, it's a one-pot dish, ready in 30 minutes.
For the chops:
2 thick bone-in pork chops
2 Tbsp neutral oil, like canola
1/2 Tbsp kosher salt
1 tsp freshly cracked black pepper
1 tsp warm spice, such as cinnamon, allspice, etc ( optional )
For the sauce:
2 crisp apples, like Fuji ( cored and cut into 12 wedges each )
2 Tbsp unsalted butter
1 tsp rosemary ( chopped )
1 tsp sage ( chopped )
1/2 c red onion ( chopped )
2 cloves garlic ( unpeeled, crushed )
1/2 c chicken stock
2 Tbsp heavy cream
1 Tbsp Dijon mustard
Salt and pepper to taste

Mini apple pies with a caramel apple filling.
1 Granny Smith apple ( peeled and cut into 8 wedges )
1 Tbls lemon juice
1 Tbls granulated sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
dash of allspice
1/2 cup caramel bits
1 tsp milk
1 refrigerated pie crust ( I used Pillsbury )
1 egg ( lightly beaten )
sugar to sprinkle on top
1 Tbls lemon juice
1 Tbls granulated sugar
1/2 tsp ground cinnamon
1/8 tsp ground nutmeg
dash of allspice
1/2 cup caramel bits
1 tsp milk
1 refrigerated pie crust ( I used Pillsbury )
1 egg ( lightly beaten )

Preheat oven to 425°F.
Line cookie sheet with parchment paper.
