Grilled Vegetables

Grilling vegetables is not about having special equipment. The best vegetables to grill are the ones that are ripe in your garden or fresh at the market.

2 bell peppers ( remove core and seeds, quarter )
1 large red onion ( peel and quarter )
1 medium eggplant ( cut lengthwise in half-inch slices or rounds )
1 medium zucchini ( cut lengthwise in half-inch slices or rounds )
1/2 lb asparagus ( cut off woody ends )
2 medium tomatoes ( cut in half, or a bunch of grape tomatoes, leave whole )
2 large portobello mushrooms ( I like them whole )
1/2 c olive oil ( or more )
Juice from a half lemon or lime
Generous pinch of sea salt and freshly cracked pepper

Not Ketchup Cherry Chipotle sauce is base for this deliciously sweet and spicy barbecue sauce. Cherry Chipotle Chicken Barbecue Sandwiches are messy good, so grab some napkins or a towel.    Again, Erika over at Not Ketchup was a fabulous sponsor to the most recent event I participated in; #TripleSBites.  I used a little of her sauce for my Lime Shrimp with Chipotle Cherry Cocktail Sauce.  Ya know?  The sauce the hubs almost lick straight out of the bowl it was that good?  And it was that good due, in part – okay for the MOST PART – due to

It's the hottest time of year and I'm craving Latin country cuisine. This happens every year and I start making my favorite four: Mexican guacamole, Peruvian ceviche, Spanish gazpacho, and Argentinian chimichurri. So chimichurri it is today. The clash of a woodfire-grilled piece of meat and an uncooked, oil-based herb sauce. Who wins? It's a perfect tie, with both sides shining bright.

1 lb hanger steak
1/2 c extra-virgin olive oil
2 Tbsp red wine vinegar
1/2 c flat leaf parsley
2 Tbsp sage
2 Tbsp oregano
1 small shallot
2 cloves garlic
1 habanero pepper
Maldon sea salt
freshly cracked pepper

Do side dishes at potlucks and cookouts ever give you trouble? They're trouble for me. The ideal potluck or cookout dish is one that's easy to make in bulk and inexpensive, and doesn't degrade with extended heating or reheating. I nominate frijoles charros—Mexican cowboy beans cooked with onions, garlic, tomatoes, salted pork, and chilies—as one superlative potluck dish.
