Easy Chicken Enchiladas Ingredients:
16 Montecito 6 inch white corn tortillas
cooking spray
1 can (14.5 oz) Sun Harvest organic diced tomatoes in juice
1/2 teaspoon dried oregano
1/2 teaspoon cumin
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1 cup chicken ( cooked and chopped into small pieces )
3 ounces cream cheese
1/2 cup First Street Natural Fancy Shredded Cheddar Cheese
1/2 cup First Street Sour Cream
Fresh Cilantro for garnish ( chopped )

For the Ranchero Salsa Fresca:
3 pieces medium tomatoes ( seeded and roughly chopped )
3 pieces garlic cloves ( finely minced )
1 piece large yellow, orange or green pepper ( chopped )
1/2 c. green onions ( sliced )
2 T. fresh cilantro ( chopped )
1 piece jalapeno ( finely chopped and seeds removed )
1 piece large fresh lime ( juiced )
1/4 t. salt
1 T. olive oil
For the Hamburger:
1-1/2 lbs. lean ground beef
1 piece medium onion ( finely chopped )
½ t. dried oregano
½ t. cumin
to taste kosher salt
to taste black pepper
To Plate and Serve:
package corn tortillas ( any color )
1 piece medium head iceberg lettuce ( thinly sliced )

cilantro ( chopped for garnish - optional )

Step #1. In a non-reactive medium bowl, combine all fresh ingredients for the salsa. Chill at least one hour. Taste and adjust salt if needed.

Dutch oven chili con carne is comfort food. We all need it. It warms your house, your stomach, and your heart, and is super easy to make. It's a one-pot dish that requires minimal cleanup.
2 lbs lean ground beef
2 Tbsp vegetable oil
2 shallots, or 1 medium onion ( chopped )
1 bell pepper ( chopped )
2 cloves garlic ( chopped )
2 c beef stock ( or 1 c beef stock and 1 c red wine )
2 16-oz cans kidney beans ( drained and rinsed )
1 28-oz can plum tomatoes
2 Tbsp chili powder
1 Tbsp dried oregano
1 Tbsp ground cumin
1/2 tsp ground cayenne pepper
Salt and pepper to taste
Toppings, like shredded cheddar cheese, sour cream, sliced scallions, Saltine crackers, sliced jalapenos, etc
