My lemon meringue pie recipe is absolutely irresistible. The flaky butter crust is filled with smooth tangy lemon deliciousness, then topped off with a gorgeous amount of fluffy, lightly sweet meringue.
Pie Crust:
2-1/2 c all-purpose flour ( sifted )
1 c unsalted butter ( cold, cut into pea-sized pieces )
1 tsp salt
1 tsp granulated sugar
1 tsp lemon zest
A few Tbsp ice water
Vegetable shortening for greasing pie pan
Lemon Filling:
5 large egg yolks
1-1/4 c water
1-1/4 c granulated sugar
1/3 c plus 1 Tbsp cornstarch
1/2 c lemon juice
1 Tbsp lemon zest
Meringue:
5 large egg whites ( at room temperature )
1/2 tsp cream of tartar
1/2 c granulated sugar
1/2 tsp vanilla extract

Just because you are trying to eat healthy doesn’t mean you have to eat blandly. I love eggs and could easily eat half a dozen every day, however, that wouldn’t bode well for my health. This is one of my favorite ways to eat eggs, plus get in a a big serving of vegetables. Plus, if you make it in the microwave, it will take less than 5 minutes!
3 egg whites
1 Tablespoon skim milk
1/2 avocado ( chopped into small pieces )

1 Tablespoon shredded cheddar cheese ( optional )

This easy breakfast can be made in less than 5 minutes thanks to your microwave and a coffee mug!

2 tablespoons fully cooked ham or turkey bacon ( or you can omit meat )
2 tablespoons fresh baby spinach ( shredded )
1 tablespoon green pepper ( diced )
1 tablespoon red pepper ( diced )
1 tablespoon tomato ( diced )

salt and pepper to taste ( if desired )
