These Roasted Greek-Style Lemon Potatoes are made with a tasty combination of garlic and fresh lemons. The final result are crispy edges with tender potatoes.

2½ lbs. Russet potatoes or other starchy or waxy potato like Yukon Gold Potatoes ( peeled and cut into thin or thick wedges )
1 t. garlic powder
to taste Sea salt
to taste black pepper
¾ c. vegetable stock
¼ c. extra virgin olive oil
½ c. fresh lemon juice
2 t. fresh lemon zest ( preferably organic )
½ T. dried oregano
Fresh oregano ( optional, for garnish )

This is a must try! These are absolutely amazing! Potatoes, flour and fried! What more could you ask for! It will be hard for you to wait for all of them to get done before you start enjoying! These are great dipped in ranch dressing, ketchup or whatever you favorite dipping sauce is!
