Sometimes we need to be transferred back to happy times. Happy food times, to be precise. Spaghetti and meatballs? You're close... Try our One-Pot Sausage Meatballs with Pasta.
1 lb mild/sweet Italian sausage
1 Tbsp vegetable oil
3 Tbsp butter
1 c chopped onion or shallot
1/2 tsp kosher salt
1/4 tsp freshly cracked pepper
3 cloves garlic ( minced )
1 Tbsp tomato paste
1 tsp anchovy paste
1 tsp oregano ( dried or fresh )
28 oz can of plum tomatoes
3 c beef stock
16 oz dried pasta of your choice
1-1/2 c freshly grated Parmesan ( or cheese of your choice )
Roughly chopped flat leaf Italian parsley for garnish
1 Tbsp vegetable oil

There's still butternut squash from this year's harvest. I'm also using some fresh herbs from the garden. A very autumnal dish.
Sheet Pan:
2 lb butternut squash, peeled, seeded, and cubed
2 shallots, peeled and cut in half
2 garlic cloves, peeled and sliced
1 lb fresh spicy Italian sausages, scored
1/4 c extra-virgin olive oil
1 Tbsp sage, chopped
1 tsp salt and pepper, each
Sauce:
1/2 c Italian flat leaf parsley, roughly chopped
1 Tbsp freshly squeezed lemon juice
1 tsp pepper and maybe a little flaky Maldon salt

How fun is this, fresh homemade pizza on the grill? Heat up the outdoors and not your kitchen. My children gave me a 14? cast iron pizza pan for Father’s Day and it worked great! Crisp crust on the bottom and nice and bubbly on top. Some folks are afraid of trying pizza dough but it is really quite easy. Take your next pizza out doors – you will love it!
2 cups warm water

Whether you are camping with the scouts, chilling with the family or in the back yard with friends, baked ziti is a comfort dish that always gets rave reviews. It is kind of a one pot “add what ever you like” kind of dish. A BIG shout out to my good friend Mark Kapp for the great picture and wonderful dish.

This easy, flavorful dish really moved up on my list of favorite one-pan meals. The sauce, meat and cheeses make a wonderful combination. This is something that can be taken with you as you travel camping and easily put together once you get there. It is sure to bring a smile to those lucky enough to be dining with you!
