One pot meals are my favorite for weeknight quick dinners. Less clean up, less hassle, no boxes. Bonus. Swedish Meatball Orzo is a perfect example. So it isn’t actual meatballs – but it DOES have all the flavor of your favorite Swedish Meatballs and none of the hassle.
1 1/2 pounds lean ground beef
1/2 cup chopped onion
1 clove garlic diced
1/2 teaspoon garlic salt
1/4 teaspoon pepper
1/4 teaspoon onion powder
dash nutmeg
3 1/2 cups beef broth
1 cup orzo
1/2 cup sour cream

Crêpes are so easy to make! I have been a little terrified of them, but once I took the plunge and just started making them I discovered that they are just as easy – if not a bit easier – than pancakes!
2 large eggs
3/4 cup whole milk
1/2 cup water
1 cup all-purpose flour
3 tablespoons melted salted butter
1/2 teaspoon vanilla
2 tablespoons sugar
Filling
4 ounces cream cheese room temperature
3 tablespoons powdered sugar
1/4 teaspoon vanilla
1/2 jar marionberry seedless jam or your favorite berry jam!

1 cup all-purpose flour

2 tablespoons sugar
Filling
4 ounces cream cheese room temperature
3 tablespoons powdered sugar

Put all ingredients in a blender and pulse until well combined. Let sit in a fridge for 1 hour to let bubbles settle which will help prevent the crepes breakage.

Swedish Meatballs are among my favorite comfort foods! The delicious meatballs, creamy sauce and buttered egg noodles are so wonderful and satisfying! Swedish Meatballs are a great dish to make for your family or if you're having company. It's also a fantastic dish to bring to a pot luck dinner.
1 1/2 lb ground beef
1 small onion
1/3 cup plain breadcrumbs
1 tsp salt
1/4 tsp pepper
1 egg
1/2 cup milk
5 tbsp . butter, separated into 4 tbsp and 1 tbsp
1/2 cup flour, separated into 1/4 cup each
1 tsp paprika
2 cups beef broth
1 cup sour cream
1 pkg wide egg noodles
1 small onion

½ stick (1/4 cup or about 50 grams) unsalted butter
1 leek, sliced (white & light green parts only)
5 cups (1,25l) fish stock (can be substituted with water)
1 lb. (450g) potatoes, cubed
1 carrot, sliced
1 lb. (about 450g) salmon fillet, de-boned, de-skinned and cut into small chunks
1 cup (250ml) heavy cream
1 cup (about 10 grams) fresh dill for garnish, finely chopped

My mums Anglo Danish fusion of a traditional Danish dish called Burning Love which was traditionally made with bacon but this uses leftover roast lamb, fried up with onions and served on a bed of mashed potatoes!
