Peach cobbler. That quintessential cafeteria-line hot dessert. Peach cobbler has soul-food roots, and lots of ways to make it. Pie crust. Dumpling dough. Cake batter. Biscuit topping. Whichever you prefer, don't forget the vanilla ice cream! This recipe uses biscuit dough for an easy crust, and makes a very juicy cobbler. enjoy!

Filling:
2 (29 oz) cans sliced peaches
2 sticks salted butter
3 c sugar
1 c brown sugar
1 T cinnamon
1 T vanilla
1 T lemon juice
2 T cornstarch
1/4 c cold water
1 batch sour cream biscuit dough:
2 c self rising flour
2 sticks unsalted butter at room temperature
