Corn Dip with Mexican Style Sour Cream Ingredients:
2 cans (15.25 oz) whole kernel sweet corn
1/2 cup onions ( diced )
1 can (4 oz) green chilis ( fire-roasted and diced )
1/3 package block style cream cheese ( full fat )
3/4 cup Mozzarella Cheese ( shredded )
3/4 cup Pepperjack Cheese
1/2 cup LALA Crema Mexicana
1 package tortilla chips
cilantro ( for garnish )

This Mexican Steak Street Tacos, also known as Carne Asada Street Tacos, is a family favorite and is perfect for Taco Tuesday. I make these often and we never tire of them.

Taco Seasoning Ingredients:
2 T. chili powder
1 T. ground cumin
1 t. ground coriander
2 t. garlic powder
1 t. smoked paprika
1½ t. fine sea salt
1 t. ground black pepper
1½ t. ground white pepper
¼-½ t. cayenne pepper
Other Ingredients:
½ c. sour cream
½ c. mayonnaise
3 T. taco seasoning ( divided )
2 T. extra virgin olive oil
1¼ lbs. flank or skirt steak
to taste sea salt
16 pieces mini corn tortillas ( 4.5 diameter )
2 T. fresh lime juice
Toppings:
Sliced radishes
Cotija cheese
Diced avocado
Chopped cilantro
Lime wedges

Dutch oven chili con carne is comfort food. We all need it. It warms your house, your stomach, and your heart, and is super easy to make. It's a one-pot dish that requires minimal cleanup.

2 lbs lean ground beef
2 Tbsp vegetable oil
2 shallots, or 1 medium onion ( chopped )
1 bell pepper ( chopped )

2 c beef stock ( or 1 c beef stock and 1 c red wine )
2 16-oz cans kidney beans ( drained and rinsed )
