Tempura Battered Sweet & Sour Chicken

Flavorful tempura battered chicken, fried & served with sauteed vegetables & sweet & sour sauce. An easy at home Chinese dinner.

Chicken & Batter:
1 lb chicken breasts (about 2 large breasts) cut into 1-inch chunks
1/3 cup flour
1 1/2 Tbsp cornstarch
1/2 Tbsp sugar
1/2 tsp salt
1/8 tsp ground black pepper
1/8 tsp baking powder
1 Tbsp oil
1/3 cup water
Canola Oil for frying (about 1/3-1/2 cup)
Sauce:
1 (20oz) can pineapple chunks
1/2 cup water
1/4 cup vinegar
6 Tbsp sugar
1/4 tsp salt
1/4 cup ketchup
2 Tbsp COLD water
1 1/2 Tbsp cornstarch
1 bell pepper, cut into 1-inch chunks
1/2 onion, cut into 1-inch chunks
