Terrine de Campagne

Terrine is a coarse ground pate that is baked in a loaf pan inside a water bath. Terrines normally incorporate two types of meats and use dried fruits, in the center, such as figs, apricots or cherries. The process of making a terrine is not difficult, only involved since you will be utilizing a few preparation techniques. The yield is more than adequate, so you will have plenty to eat, share and even freeze.

Quatre epices ( ka'trehpiece) blend
3TB black peppercorns
2 tsp. whole cloves
2 tsp. ground cinnamon
1 TB ground nutmeg
To marinate the turkey
2 lbs. turkey breast sliced in ¼" strips
2 tsp. quatre epices blend
½ cup white wine
2 tsp. salt
2 TB cognac
Other ingredients:
4 lbs. pork shoulder
6 eggs
½ lb. chicken livers
2 TB. chopped parsley
3½ TB quatre epices blend
½ cup of dried apricots sliced in thin slivers
