Ok, now onto the yummy recipe for today. :) My friend Jen, over at Yummy.Healthy.Easy has been on a Thai recipe kick lately and yes, you guessed it. I am on one too! I made this delicious Thai Chicken Pizza for dinner the other night and my husband loved it. {we have actually have had it twice already now}

2 whole wheat naan flatbreads
1/4 cup of water
1 T. low sodium soy sauce
1 tsp. rice wine vinegar
1 tsp. fresh grated ginger or 1/2 tsp. of ground ginger
1 garlic clove minced
1/2 tsp. red pepper flakes
1/4 cup + 1 T. of creamy peanut butter
6 oz. pre-cooked chicken, chopped
1/2 cup green onions, thinly chopped
1/2 cup fresh cilantro, chopped
1/2 cup carrot, grated
2 cups of shredded mozzarella cheese
