Thai Minced Pork Soup

A light soup with tender and juicy pork meat ball and tofu, as well as fresh vegetables. This is among the few Thai soups that are not spicy. Yet it is still full of oriental spices and as comforting and appetizing as other commonly hot Thai dishes.

6 oz. pork
1 oz. coriander, leave removed
1/2 oz. garlic
1 tsp. salt
30 oz. chicken stock or water
5 oz. Chinese cabbage
5 oz. tofu, soft cut into 8 pieces)
2 oz. glass noodles, dried (soak in water for 10 minutes and then cut into 8cm (3 inch) pieces)
3 T. light soy sauce
1/2 tsp. ground black pepper
1/2 oz. Chinese celery
2 head spring onions
