Filled with rosemary garlic butter and coated with seasoned flour, these lamb shanks are so tender; the meat literally falls of the bone.

5 tbsp. extra virgin olive oil
4-6 lamb shanks
150g butter
Pinch salt
Pinch pepper
3 sprigs of fresh rosemary
3 sprigs fresh sage
3 sprigs of fresh thyme
2 bay leaves
Flour (tapioca/coconut for paleo)
2 onions, chopped
3 carrots, chopped
3 leeks, sliced
11 cloves garlic, unpeeled
3 stock cubes
