Three Bean Caprese Salad

1 cup great northern beans, drained and rinsed
1 cup light kidney beans, drained and rinsed
1 cup garbanzo beans, drained and rinsed
2 cups cherry tomatoes, quartered
½ cup fresh mozzarella pearls
½ cup red onion, diced
1 garlic clove, minced
¼ teaspoon salt
½ teaspoon pepper
10 fresh basil leaves, chopped
3 teaspoons olive oil
3 teaspoons balsamic glaze
1 cup light kidney beans, drained and rinsed
1 cup garbanzo beans, drained and rinsed
2 cups cherry tomatoes, quartered
½ cup fresh mozzarella pearls
½ cup red onion, diced
1 garlic clove, minced
¼ teaspoon salt
½ teaspoon pepper
10 fresh basil leaves, chopped
3 teaspoons olive oil
3 teaspoons balsamic glaze
Add all the ingredients to a large bowl and mix well.
Adjust the salt and pepper, if needed. You can also drizzle some more balsamic glaze if you want.
