Three Bean Salad in a Tangy Mustard Dressing

I think Hubby is more of a bean fan now that he’s tried this. It’s now something he requests often since it’s tasty AND healthy. Give it a try! It’s delish.

1 cup dry small red beans (or one 15 oz can, drained)
1 cup dry garbanzo beans (or one 15 oz can, drained)
1/2 cup dry kidney beans (or half a 15 oz can, drained)
1 tablespoon Mrs. Dash Garlic & Herb Seasoning
10oz fresh green beans
1/3 cup diced shallots
1 tablespoon chopped fresh parsley
1/2 cup extra virgin olive oil
1/4 cup apple cider vinegar
2 tablespoons sugar or sugar substitute
1 clove garlic (minced)
1 teaspoon honey mustard
salt & pepper to taste
