Tiger Sauce (Horseradish Cream Sauce)

This is a condiment that goes especially well with beef. We like ours pretty spicy, so feel free to decrease the amount of horseradish or add sour cream called for here if you have more sensitive taste buds. You can use any kind of rendered animal fat in this recipe – though, I assume that bacon would be the most popular. Don’t skip this ingredient, however – it adds some much needed savoriness.

3 tbsp prepared horseradish
1/4 c mayonnaise
1 tsp fresh squeezed lemon juice
1 tsp rendered bacon fat
salt & pepper to taste
*Add by tablespoon sour cream to cool it down to make it less spicy, if needed.

Whisk thoroughly.
Serve immediately.
Can be stored in the refrigerator for up to a week.
