6 tablespoons unsalted butter, room temperature
1/3 cup light brown sugar
1/3 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 cup (2 tablespoons) all purpose flour
1 1/2 tablespoons corn starch
1/2 teaspoon baking soda
3/4 cup espresso chocolate chips
1/2 cup toffee bits
1/2 cup sweetened shredded coconut
