Great appetizer or finger food for any party or even for a snack at home.

6 large potatoes (peeled, shredded and pat dried with paper towels)
3 tsp corn starch
1 cup tuna flakes in oil (drained and shredded)
1/2 cup cheddar cheese (grated)
1 TBSP finely chopped Onions
a handful of raisins
1/2 cup mayonaise
salt and pepper to taste
chopped parsley for garnishing
Oil for deep frying
