Tuscan Chickpea Dip

Delicious chickpea dip with tomatoes, garlic and Parmesan cheese.

2 (15.5 oz.) cans chickpeas, rinsed and drained
1/2 cup chicken stock
3 tablespoons olive oil
2 roma tomatoes, seeded and diced
2-3 cloves garlic, minced
1/4 cup grated Parmesan cheese
2-3 tablespoons minced parsley
1-2 tablespoons lemon juice
Salt and pepper, to taste
Crusty bread, crackers or fresh vegetables, for serving
