Get your kids in the kitchen and I guarantee it will change your life. Drastic? Maybe. Rewarding? Totally! A couple weeks back, I taught a children’s cooking workshop where my colleague, Vivian, had introduced me to the idea of the Twice Baked Potato. Now, while this is unfortunately not a last minute dinner idea, since the potatoes have to bake for at least an hour beforehand, it is a super simple recipe. 4 Idaho Potatoes scrubbed and clean
1/2 cup whole reduced fat milk
4 tablespoon light butter
2 cups broccoli florets (fresh or frozen)
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 tablespoon olive oil
Kosher Salt
