3 large russet potatoes baked and cooled
3 tbsp butter unsalted
3 tbsp flour
1 1/2 cups heavy cream
1 1/2 cups whole milk
1/2 tsp salt
1/2 tsp black pepper
1 cup cubed ham
1 cup shredded white cheddar cheese or Gruyere
1/2 cup chives chopped
