Ultimate Burritos

Ultimate Burritos were an easy staple vegetarian recipe during my college years. It was just so easy to always keep a package of tortillas and some cans of beans on hand, and I always had a good supply of fresh vegetables to use in them. My roommates would see me eating these and would be in awe at my gourmet dinner compared to the mac n’ cheese and ramen noodles they were eating. I didn’t even spend much more time or money on my food. Besides being inexpensive and easy, this is fantastica!

1 can black beans
1 can kidney beans
1 cup corn
whole wheat tortillas
Monterrey jack, Colby jack, cheddar, or vegan cheese, grated
lettuce, torn
tomatoes, diced
onions, finely diced
green bell pepper, diced
avocados, diced (or guacamole)
sour cream or plain yogurt
salsa or hot sauce
1 can kidney beans
