Unstuffed Peppers
Made with turkey or beef, this is a simplified favorite of the traditional stuffed peppers

1.5 lb. 7% lean ground turkey (or beef)
3 green peppers (cut into 1" cubes)
1 can petite diced tomatoes
1/2 white onion (diced)
2 gloves garlic (finely chopped)
2 tsp. salt
1 tsp. pepper
1/4 tsp. dried basil
1/4 tsp. dried thyme
1/2 tsp. dried italian seasonings
3 green peppers (cut into 1" cubes)
1 can petite diced tomatoes
1/2 white onion (diced)
2 gloves garlic (finely chopped)
2 tsp. salt
1 tsp. pepper
1/4 tsp. dried basil
1/4 tsp. dried thyme
1/2 tsp. dried italian seasonings
1. Over medium/high heat, sauté garlic and onion until onion is soft. Add green pepper and sauté 5 minutes.
2. Add ground turkey and cook until turkey is no longer pink.
3. Reduce heat to medium. Add tomatoes, salt, pepper, basil, thyme and Italian seasonings. Mix thoroughly and simmer for 10 minutes.
*Extra options: stir in 1.5 cups cooked rice
