1 lemon zest
1/2 cup castor sugar
1 large egg
1 cup buttermilk
1/3 cup oil
1 teaspoon vanilla essence
2 cups plain flour
2 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1.5 cups fresh raspberries

1.5 cups fresh raspberries
Preheat oven to 425 degrees.
Mix all dry ingredients first, then add all wet ingredients and mix with a wooden until well mixed, do not over mix. Fold in raspberries.
Pour the mixture in cupcake or muffin liners. Bake in preheated oven for 3 minutes and then reduce the temperature to 160 degrees and continue baking until done, about 15 to 20min.
Dust with icing sugar if desired. Taste heavenly when serve warm??
