Vegan Chocolate Ice-cream

This is a delicious dairy free ice-cream with no refined sugars. I use three forms of chocolate because it adds a rich full chocolate flavour. It also has beneficial fats in the form of cashew nuts and Udo’s Choice Ultimate oil blend. I use organic ingredients because they taste so good.

1 tablespoon organic cocoa powder
2 teaspoons ground organic cacao (nibs) powder
½ oz (15g) grated raw or organic dark chocolate
2 tablespoons organic crushed cashew nuts
4 ½ oz (130g) organic tofu
¾ cup Rice Dream organic vanilla rice milk
1 tablespoon Udo’s Choice Ultimate oil blend
¼ cup organic sugar free soya milk
½ tsp organic sugar free vanilla extract
Pinch sea salt
¼ organic vanilla pod
1 tablespoon organic light agave
1 tablespoon xylitol
