Vegan Coleslaw

FINALLY! A vegan coleslaw, free of gluten, sugar and vinegar! You'll love it!

1 head red cabbage
3-4 carrots
1 apple
3-4 scallions
1/2 to 1 cup almonds

Dressing:
1/2-3/4 cup coconut milk
approx. 1 TBSP lemon juice
dash of salt and pepper to taste
1/4 tsp celery seed
approx. 1 TBSP olive oil
Clean and chop all veggies. Pulse in a food processor, along with almonds, until finely chopped (or coarsely chopped, depending on how chunky you like it).
