Love pudding? Love oatmeal cookies? Love cookie dough? If you said yes, then you are going to be head over heels for this easy, healthy, vegan oatmeal cookie dough breakfast pudding! Breakfast or dessert, it doesn't matter!

¼ cup cornstarch
2 tablespoons oat flour
2 tablespoons quick oats
2 cups Silk coconut milk
¼ cup maple syrup *honey if not strict vegan*
3 tablespoons peanut butter
½ teaspoon cinnamon
1 teaspoon vanilla
a pinch of baking soda (optional, but it helps the cookie dough flavor)
2 tablespoons oat flour
2 tablespoons quick oats
2 cups Silk coconut milk
¼ cup maple syrup *honey if not strict vegan*
3 tablespoons peanut butter
½ teaspoon cinnamon
1 teaspoon vanilla
a pinch of baking soda (optional, but it helps the cookie dough flavor)
1.Whisk cornstarch, oat flour, and quick oats in a medium sized pot.
