You won't miss the meat in this caramelized shallot, lentil and vegetable shepherd's pie with garlic chive mashed potatoes.

1 cup dry green lentils rinsed
3 cups low-sodium vegetable broth
1 and 1/2 tbsp olive oil
3 shallots
1 clove garlic
1 large carrot
1/4 tsp smoked paprika
1/4 tsp dried thyme
1 red apple diced
1/4 cup tomato paste
3 tbsp low-sodium soy sauce
1/2 tbsp maple syrup
2 lbs red potatoes
1/4 cup non-dairy milk
2 tbsp olive oil
3/4 tsp salt
4 cloves garlic
1/2 bunch chives
