Vegetable korma is a popular curry recipe in India.This is a South Indian style of curry which makes use of coconut paste as base with other spices to give spicy taste and flavor to curry.

2 Cup Diced Mixed vegetables
2 Onions
3 Tomatoes
1 Green chili slit
2 tbsp. Coriander leaves
1 tsp. Pepper corn
1tbsp. Ginger chopped
4 Garlic cloves
1/2 cup Coconut slice
11/2 tsp. Red chili powder
1 tsp. Salt or as per taste
1 tsp. Coriander powder
1 inch Cinnamon stick
4 Cloves
7 Curry leaves
4 tsp oil
1/2 tsp garam masala powder

1/2 tsp garam masala powder
1. Wash and dice the vegetables (I have used carrots,beans,peas and capsicum)
2. Masala preparation- in a skillet add chopped onions, tomatoes, green chili, ginger, garlic ,pepper corn ,coconut and tsp of oil.Fry for 5 min until the tomatoes are soft and cooked.
3. Cool the fried mixture and then blend them into fine paste using 1/2 cup water.
4. In a heavy bottom sauce pan/pressure cooker add 3 tsp of oil.when oil is hot add whole garam masala and fry for few seconds, then add curry leaves, diced vegetables,salt and fry them in oil for few seconds.
5. Now add the masala paste and mix well with vegetables.Add 1/2 cup of water and cover the pan and cook for 15 to 20 min.
6. Once the vegetables are well cooked, add 1/2 tsp of garam masala powder and chopped coriander leaves and cook for another 1 min and then transfer to serving bowl and enjoy with rice/roti.
