This Vegetable Tofu Lo Mein is a healthy and delicious twist on the Chinese classic!

1 lb. linguine
2/3 cup vegetable broth
3 tbsp. soy sauce
1 tbsp. seasoned rice wine vinegar
1 tsp. sriracha
1 tsp. sesame oil
1 tbsp. corn starch
1 (14-oz.) package extra firm tofu
1 tbsp. olive oil
1 small onion, halved and thinly sliced
1 (12-oz.) package rainbow slaw mix
3 garlic cloves, minced or pressed
