Stroganoff is a classic comfort dish. It is normally made with beef, but this alternative uses mushrooms instead. You don't lose any of the flavor, but you gain a great earthiness from the mushrooms, and tanginess from the goat cheese. I will make this again and again!

12 oz extra wide egg noodles
3 tbsp unsalted butter
5-6 large portobello mushrooms
