Rice noodles are the base for this quick and tasty #MeatlessMonday meal.

8 ounces rice noodles or vermicelli
1/2 cup celery, julienned
1/2 cup carrots, shredded
1/2 cup onion, thinly sliced
1 cup shiitake mushrooms, thinly sliced
1 cup portobello mushroom caps, thinly sliced
1 cup snow peas
4 cloves garlic, minced
2 teaspoons fresh ginger, grated
2 cups cabbage, shredded
1 cup sugar snap peas
2 cup vegetable broth
2 tablespoons low sodium soy sauce
1 tablespoon fresh lime juice
1/2 teaspoon sriracha sauce
2 tablespoons extra virgin olive oil
1/2 cup fresh parsley, chopped
1/4 cup dry-roasted peanuts, chopped
