Veggie Summer Rolls

Summer rolls are always sweet and juicy due to the fresh ingredients. This veggie version replaces the typical filling, shrimp meat, with shredded omelet. (The non-veggie version may also have egg as an optional in the filling.) Cucumber and lattice are other vegetables commonly used for the filling.

10 oz. Vietnamese rice paper
4 oz. rice noodle (thin and dried)
4 eggs
8 oz. carrot
8 oz. spinach
1 tsp. salt
2 T. fish sauce
2 red chili peppers (fresh)
1/2 oz. garlic
1/4 oz. coriander
1 lemon
1 T. sugar
