Very Best Minestrone

I've made lots of versions of minestrone, including vegetarian and pescetarian (seafood). This one is MY personal favorite. One of the best things about minestrone is that you can make it however YOU like it!

½ lb. Johnsonville Sweet or Mild Sausage, Ground or Links with casings removed, rolled into meatballs and browned
3 carrots, diced
5 stalks celery, chopped
1 large onion, diced
2 cloves garlic, minced
1-2 Tbsp. Olive oil (if desired)
3 zucchini, chopped
3 yellow squash, chopped
1 head cabbage
1-1 1/2 quarts. Chicken Stock or Broth (extra, as needed)
2 cans great northern white beans
2 cans red kidney beans
1 can diced tomatoes
1 tsp. oregano
1 tsp. basil
Fresh ground black pepper, to taste
1 bay leaf
¼ cup parmesan cheese, grated (plus rind, if available; plus extra for garnish)
Fresh parsley (if desired, for garnish)
