This is a wheat free pancake recipe that the whole family will love. The pancakes hold their form nicely and have a nutty texture mixed with a delightful semi-sweet flavor.

1/4 cup chick pea flour
1/2 cup coconut flour
1cup almond flour
2 tbsp potato (yam) starch
1tbsp baking powder
3 tbsp sugar
1/2 tsp salt
2 eggs beaten
2 tbsp vanilla extract
2 tbsp olive oil
1/4 cup creamer (flavored coffee creamer of your choice)
1 cup milk (add milk until batter is pancake consistency)
1/2 cup coconut flour
