White Bean - Potato Tacos are super yummy, with a hint of smoky chipotle in the well-rounded, sweet & tangy sauce. Just all around a perfect taco filling!

1 medium russet potato, cut into ¼ - ½-inch cubes
1 teaspoon olive oil or light tasting oil of your choice
½ white onion, chopped
½ teaspoon kosher salt
