Gooey White Chocolate Carmel Oatmeal Cookies

1 1/2 Cups Whole Wheat Flour
1 tsp. baking soda
1/2 tsp. salt
1 Cup butter (NOT unsalted or Margarine) Room Temperature
3/4 Cup sugar
1 Cup Brown Sugar lightly packed
2 Eggs
1 tsp. vanilla extract
3 1/2 Cups Oatmeal (regular, not cooked)
1 pkg Brach's Brand Caramels - unwrapped and cut into quarters ( I cut them with kitchen shears)
6 oz. White chocolate chips
Preheat oven to 350 degrees. Position racks in center of oven. Be sure to cover your Cookie Sheets with either Parchment Paper or a silicon mat to prevent cookies from sticking to the pan. Cream together butter, sugar, brown sugar, vanilla, and eggs. In separate bowl combine flour, and baking soda and salt. Gradually add to creamed butter mixture a little at a time until well blended. Add Oats a little at a time until incorporated. Fold in cut up caramels and chocolate chips. Drop by spoonfuls onto Parchment Covered Cookie Sheets Bake approximately 10 minutes Allow cookies to rest for about 15 minutes before removing them from the cookie sheet.
