Zucchinis taking over? This family favorite makes great use of them!

1 lb. Italian sausage
1 small onion, chopped
1 green pepper, chopped
1 jalapeno pepper, diced fine
3 small zucchinis, quartered lengthwise and sliced
1 can (15 oz.) tomatoes, undrained
1 jar (24 oz.) marinara, or favorite pasta sauce
Parmesan cheese (optional)

In a large skillet, brown and crumbled the Italian sausage. Drain. Add onion, peppers and zucchini. Saute until onion is translucent and zucchini just starts to brown on edges. Add tomatoes and marinara. Simmer 5-15 minutes to meld flavors.
Serve over mashed potatoes, pasta or rice. Sprinkle with Parmesan cheese if desired.
