This is an adaptation to the traditional Zuppa Toscana you can find at Olive Garden.

1 lb Italian sausage (fried, crumbled, & drained on a paper towel)
6 slices bacon (fried & crumbled)
5 medium potatoes, sliced into rounds
2 cups spinach
1 cup heavy cream
4 cuos water
28 oz chicken broth
1 tbsp. onion powder
1 tbsp. minced garlic
1 tsp salt
1 tsp pepper

In a large stock pot, over medium heat, combine water, chicken broth, potatoes, onion powder, and minced garlic.
Cook until potatoes are soft.
Add sausage, bacon, salt, and pepper. Simmer for 10 minutes.
Chop the spinach into bite sized pieces. Add the spinach and heavy cream to the pot. Reduce heat to low and simmer another 10 minutes.
Serve with hot bread and a salad.
